About the Recipe
This recipe is inspired by a bunch of separate egg roll bowl recipes. I'm not sure specifically who I originally got the recipe from, but as soon as I have that info, I will be sure give credit where credit is due!

Ingredients
1 Lb Ground Meat (Turkey, Beef or Pork)
1 tbsp Sesame Oil
1 tbsp Rice Vinegar
2 tsp Minced Garlic
1 tsp Ground Ginger
1/4 Soy Sauce (less sodium)
1 (16 oz) Bag Cole Slaw Mix with Carrots *
Green Onions *
Salt & Pepper ; to taste
1 tbsp Hoisin Sauce *
1 Egg per person *
White Rice *
Preparation
In a large skillet add ground meat and cook, stirring until no longer pink. (drain if you have excess grease)
Add Ginger, sesame oil, rice vinegar and bag of cole slaw mix.
Scrable 1-4 eggs into separte skillet while cole slaw mix is cooking. Add to large skillet when egg is fully cooked.
Add Hoisin Sauce and continue to cook & stir for about 5-7 minutes until cole slaw mix is wilted.
Remove skillet from heat. Serve over rice. Garnish with green onion and season with salt and pepper to taste.

Recipe Notes:
- Hoisin Sauce is Optional but is 10/10 Recommended
- My preferred rice Jasmine Rice.
- Scrambled egg is optional as well, but I also 10/10 Recommend adding it.
- You can stir in green onion before serving, but my kids are not huge fans, so I garnish separately in each dish.
- My preferred cole slaw bag is the one with shredded carrots in the mix.
